Argentinean-style artichoke

Prep time: 90 minutes


  • 1 artichoke
  • 1/4-1/2 cup of lemon juice
  • salt


  1. In a covered pan, boil the artichoke for 1 hour – enough water to cover at least half of the artichoke
  2. After an hour, remove the artichoke from the boiling/steaming water and let cool at room temperature for 30 minutes
  3. in a small bowl, pour the lemon juice and salt to taste – option to add 1tbsp vegetable oil to the lemon-salt mix
  4. ENJOY! – how to eat the artichoke: peel one leaf at a time, soak the bottom in the lemon-salt mix, and bite off the pulp at the bottom. you will need a separate plate to dispose of the leaves you take a bite of
