Chocolate Chip Peanut Butter Protein Pancakes

Prep time: 10 minutes

Ingredients:

  • 1 serving of Kodiak Power Cakes
  • 1 serving of Ghiradelli semi-sweet chocolate chips
  • 1.5 servings of chocolate PB2
  • 0.5 medium banana

Preparation:

  1. In a bowl, mix 1 serving the Kodiak Power Cake mix with water as per the instructions in the packaging
  2. Add the serving of chocolate chips
  3. Leave that bowl on the side to prepare the PB2 in a smaller bowl, by mixing the 1.5 servings with water as per the instructions in the packaging
  4. Spray 0-Calorie cooking spray on a small skillet and turn on the stove on medium
  5. Pour half of the pancake mix onto the skillet
  6. When the bottom has cooked, flip over
  7. Put on a plate and spread half of the PB2 on top of the first pancake
  8. Pour the rest of the pancake mix on the skillet and cook as step #6
  9. Add this second pancake on top of the PB2 spread of the first pancake
  10. Spread the other half of PB2 spread on top
  11. Slice half a medium banana
  12. Add the slices on top of the pancakes
  13. ENJOY!
