Ground Turkey, Farro, Spinach and Arugula Salad with Edamame

Ingredients:

  • 1 package of Italian Farro
  • Kale, washed, pulled from stems, and chopped
  • Spinach, washed, amount of your liking
  • Arugula, washed, amount of your liking
  • 1 medium carrot, diced to your liking
  • 1 serving of edamame
  • 4oz ground turkey, lean

Preparation

  1. Cook the farro as directed in the package
  2. Drain it and let it cool
  3. Spray non-stick spray/Pam on a skillet and cook the ground turkey while you are cooking the farro
  4. Mix the farro, kale, spinach, arugula, edamame, and carrots, in a bowl
  5. Add the ground turkey and mix
