Farro Kale Salad

Ingredients:

Vinaigrette:

  • 5 cup lemon juice
  • 5 cup olive oil
  • Garlic powder
  • True lime: lime, garlic and cilantro spice mix
  • Mrs Dash Southwest Chipotle Blend
  • Sea Salt to Taste

Salad:

  • 1 package of Italian Farro
  • Kale, washed, pulled from stems, and chopped
  • 4 roma tomatoes, diced to your liking
  • 1 stalk of green onions, finely diced

Preparation:

  1. Cook the faro as directed in the package
  2. Drain it and let it cool
  3. Mix your ingredients for the vinaigrette
  4. Mix the faro and the vinaigrette in a bowl
  5. Add the kale, tomatoes, and onions , and mix
